Barbs Black Bean Salsa

1 can black beans
2 large tomatoes
1/2 purple onion
2 tablespoons fresh lime juice
1 tablespoon red wine vinegar
1 1/2 cup white frozen corn
1 avocado
1/2 cup cilantro
2 tablespoons olive oil
2 teaspoons salt
1/2 teaspoon pepper

Marva's Salsa


1⁄2 bushel tomatoes (4 gallons, pulled and cut up)
1⁄2 c. salt
3 cups vinegar (1/2 pt. vinegar)
10 green bell peppers (cut up small)
5 onions (cut up small)
3 c. shredded carrots (around 1 pound)
3/4 teaspoon minced garlic or 3 cloves garlic
15 jalapeno peppers (leave seeds in 5)
3 T. horseradish

Cook 2.5 hours-put in pints-hot water bath 10 minutes

To make smaller batch:

6.6 lb tomatoes 2 1⁄2 green peppers 1/8 c. salt
1 1⁄4 white onion 3⁄4 c. shredded carrots 1/8 c. vinegar
3⁄4 cloves garlic 1 jalapeno 3⁄4 T horseradish

Crockpot Chicken Tacos {cassidy merrill}

1 can black beans {drained}
1 can corn
1 can chicken broth
1 cup salsa
1 package taco seasoning
3-4 chicken breasts

Cook on 4-5 hours on high

Honey Lime Enchiladas {sisters cafe blog}

1.5 pounds pork or chicken, cooked and shredded.
Sauce:
1/3 cup honey
1/4 cup lime juice
1 tablespoon chili powder
1/2 teaspoon garlic powder

2 (10 ounce) cans green enchilada sauce
flour tortillas
equal parts mixed together of:
mozzarella cheese, shredded cheddar cheese


Mix sauce ingredients then add to shredded pork or chicken.  Let the sauce soak into the meat for about 30 minutes.
Lightly spray 2 pans with non-stick baking spray. (I usually use one 9x13 and one 9x9 but it may vary with how thick you stuff your enchiladas).  Pour green enchilada sauce into pans to coat the entire bottom.  Fill tortillas with shredded meat and desired amount of cheese.  Roll in place and dish.

Pour remainder of sauce over enchiladas and sprinkle more cheese on top.  Bake uncovered at 350 degrees for 30 minutes.  Then turn on broiler and place enchiladas nearer to the top of the oven  Let it brown until cheese is slightly brown and crispy. 

Beef Ole'

1.5 pounds ground beef
1 cup chopped onion
1 large can tomato sauce
1 can kidney beans
1 tablespoon chili powder
1 teaspoon garlic powder
1.5 cups cottage cheese
1 beaten egg
10 corn tortillas
1/2 pound grated jack cheese

Brown ground beef and chopped onion.  Stir in tomato sauce, kidney beans, chili and garlic powders.  Simmer for 10 minutes.  Blend cottage cheese and egg.  Place a layer of corn tortillas in a 9x13 casserole dish.  Put a layer of meat sauce on top of tortillas, then a layer of cottage cheese.  Top with Jack cheese.  Repeat layers ending with jack cheese. 
Bake at 375 degrees for 25 minutes.  Top with lettuce, tomato, guacamole or any items your family loves. 

Chicken Wraps

4 chicken breasts (cooked and diced)
1 package Zatarans Black Beans and Rice (make as directed)
1 can corn
1 can green chilies (diced)
1 small can olives (sliced)
1 can black beans
2 cups shredded cheese
1/2 cup green onions (sliced)
1/2 cup sour cream
1/2 cup salsa
uncooked flour tortillas (are best)

Cook rice.  Mix all ingredients.  Cook tortillas and place 1 cup mixture on warm tortilla.  Top with sour cream, salsa, cheese, etc.

Fajitas

Marinade:
1/2 cup vegetable oil
1/4 cup red wine vinegar
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 red pepper (sliced)
1 green pepper (sliced)
1 small onion (sliced)
-marinate over night-

Slice 6 chicken breasts or roast beef.  Cook in frying pan.  Add peppers.  Put meat and peppers in flour tortilla.  Add cheese, shredded lettuce, and diced tomatoes.

Sour Cream Enchiladas

2 pounds hamburger or chicken
1 small can green chili peppers (chopped and peeled)
1 large onion diced
2 cans cream of chicken soup
1 pint sour cream
1 1/2 pound grated cheese
12 flour tortillas

Brown meat and onion. Add peppers.  In a bowl, mix soup and sour cream.  Save part of the mixture to go on top.  Fill tortilla with meat, soup mixture, and cheese.  Roll and put in pan (open side down).  Cover with remaining sour cream mixture and add rest of the cheese.  Sprinkle with paprika.
Bake at 350 degrees for 20 minutes.
